Chicken? Sauce! Chicken! Sauce? Not sure which one of these I’m most excited about! This creamy avocado sauce is a weight watchin’ staple in my house. Not only is it delicious but it’s a great way to stretch your avocado to get more bang for your points! I use it as a topping for quesadillas, as a dressing for taco salads, and as a dip with chips and salsa. I wanted to find a fun new way to use this fav so I dreamed up these taco-spiced chicken strips and man, they turned out deeeeelish!
The chicken strips are so easy to make – you simply season your chicken with taco seasoning and dredge the strips in cornflake crumbs. I love using cornflake crumbs over regular breadcrumbs – more crunch, more flavor. Win win! You can find them in a box right next to the regular breadcrumbs. I’ve included directions on how to airfry (my fav!) or bake these tasty chicken strips.
The avocado sauce is so good it probably deserves a post of it’s own. I promise you’ll be looking for ways to use this delicious spread. Once you make it PLEASE come back and let us know your favorite way to use it!
The chicken strips are just 1 Blue WW SmartPoint/3 Green WW SmartPoints per serving and the avocado sauce is 2 WW SmartPoints on both the Blue and Green plans. Enjoy!
PS – I have a Farberware brand airfyer and highly recommend it! It’s cheaper than most brands on the market and works wonderfully. I tested this recipe in both my airfyer and the oven – the chicken out of the airfyer cooked faster and was easily twice as crispy. Once you start using one you’ll never go back!
- 1 lb chicken breast, cut into strips
- 6 tbsp (33g) cornflake crumbs
- 1.5 tbsp taco seasoning
- salt and pepper, to taste*
- 1 avocado
- ½ c plain fat free greek yogurt
- 1 tsp hot sauce, to taste
- juice from ½ lime
- ⅛ tsp garlic powder
- 2 tbsp cilantro, chopped, optional
- salt and pepper, to taste
- Place chicken strips into a bowl and sprinkle with the taco season. Toss until the strips are well coated. Season with additional salt and pepper, if desired. *
- Place cornflake crumbs on a small plate and roll each chicken strip in the crumbs, coating well. Set aside on a baking sheet. ( The chicken is moist so the crumbs should have no trouble sticking. If they need a little help add about 1 tsp water to the bowl of chicken and taco seasoning.)
- Cook - AIRFRYER: cook chicken strips in the airfryer at 400F, about 12 minutes, until internal temperature reaches 165F. OVEN: cook chicken strips on a non-greased baking sheet at 375F, about 15 minutes, flipping halfway through, until internal temperature reaches 165F.
- Make the Sauce: In a small bowl mash the avocado with a fork until the avocado is mostly smooth. Stir in greek yogurt, hot sauce, lime juice, garlic powder, and cilantro. Season with salt and pepper.
1 serving of chicken strips = 1 Blue WW SmartPoint/3 Green WW SmartPoints
1 serving of avocado sauce = 2 WW SmartPoints on both the Blue and Green plans
* Use your favorite taco seasoning - store bought or homemade! Check the ingredients to determine if you want to add more salt to the mixture. Many store bought seasonings already have plenty of salt.
