How fun are these little guys?! Skip the bun for a more nutritious version of a summertime favorite! These Sweet Potato Bun Sliders are simple to make, making them perfect for any night of the week. I made a super flavorful burger patty then paired it with some sliced tomatoes, smashed avocado, and homemade pickled onions. I sandwiched everything between two roasted sweet potato slices – aka a sweet potato “bun” – making it the perfect bite.
You can top your sliders with anything you want but smashed avocado has to be my favorite. A wedge of Laughing Cow cheese or slice of crispy bacon would also be delish!
The sliders work out to 9 Blue WW SmartPoints/10 Green WW SmartPoints for two burgers so I like to serve it with some zero point sides. An ear of corn and fresh melon are the perfect partners for these tasty burgers! Enjoy!
- 1 lb ground beef sirloin (90/10)
- 1 tsp Worcestershire
- 1 tsp Sriracha
- ¼ tsp garlic powder
- ¼ tsp salt
- ¼ tsp pepper
- 2 medium sweet potatoes (look for sweet potatoes that will cut into about 2½ inch round slices in diameter - think about the size of a slider bun!)
- 8 tomato slices
- 1 small avocado, smashed
- Pickled onions (recipe linked in post!)
- Preheat oven to 400F.
- Slice sweet potatoes into 16 rounds that are about ⅓ in thick. Spray both sides with a little cooking spray and sprinkle with salt and pepper.
- Place on cookie sheet and bake for about 30 minutes, flipping halfway through. Potatoes should be tender but not mushy.
- Meanwhile place ground beef into a large bowl and add the worchestershire, sriracha, garlic powder, salt, and pepper. Mix well.
- Form beef into 8 burger patties - 2 oz each.
- When the sweet potatoes have about 10 minutes left go ahead and preheat a large skillet or cast iron pan over medium heat. Add a little cooking spray and cook burgers over medium heat for about 4-5 minutes, flipping halfway through. (They are small so it doesn't take long!)
- Assemble your burgers! Between two sweet potato slices add a burger, slice of tomato, 22 g of smashed avocado, and some pickled onions. Enjoy!
