Hi, Katie, tell us about yourself!
Hi, there! I’m Katie from @katieswholeadventure on Instagram and I’m so excited to share a favorite recipe with you all – thanks, Rachel! I live in the beautiful Pacific Northwest (Seattle!) with my husband, four year old daughter, and eight month old son.
About 2.5 years ago I suffered a miscarriage that left me grief-stricken and depressed, turning to food for empty comfort and emotionally eating all the things. With the support of my amazing husband, I knew I needed and wanted to take better care of myself so I joined WW and embarked on a health journey to become the happiest, healthiest version of myself. I started my Instagram account for accountability and found an incredible community full of support and inspiration. Over the past few years, I’ve been working on changing my relationship with food and have embraced a (mostly) clean eating lifestyle. I love fueling my body with real, whole foods…but I also look forward to Pizza Fridays with my family. Hello, balance!
What motivated you to change your lifestyle?
I’ve got two little kiddos who inspire me daily to take good care of myself and set a great example. When I eat good, clean foods, I feel really good! I sleep better, my skin clears up, and I notice a definite difference in my mood as well.
What are your favorite foods to cook?
As I mentioned before, I’m striving for a good balance. I love making healthier or lightened up versions of our favorite dishes such as using cauliflower crust for homemade pizza, veggies in place of noodles/rice, or skipping the bun for lettuce-wrapped burgers. But I also love making a big bowl of pasta (the real thing!) on occasion for Sunday family dinners.
What is one piece of advice you’d give someone just starting out on a health journey?
For me, planning my meals ahead of time and meal prepping has always been key to helping me stay on track. But don’t feel like you have to meal prep every single meal and snack- that can be overwhelming. Start small, such as just prepping lunch for a few days, and experiment with what level of meal prepping works for you.
Tell us about the recipe you are sharing today!
I’m so excited to be sharing my latest recipe obsession – Pineapple Bacon Fried Cauliflower Rice! It’s gluten-free, dairy-free, and just 1 WW SmartPoint on both the Blue and Green WW plans for a one cup serving (the whole recipe is 5 SmartPoints and makes approximately 4 cups). And the best part – it’s all cooked on one sheet pan in the oven. It’s delish as a main dish (especially with a fried egg!) or served as a side dish.
Katie’s Pineapple Bacon Fried Rice makes 4 servings (~1 cup per serving) at 1 WW SmartPoint each on both the Blue and Green WW plans. Keep up with Katie on Instagram at @Katieswholeadventure. Enjoy!
- Cooking spray
- 16 oz bag of riced cauliflower (fresh, not frozen)
- 1 cup diced fresh pineapple
- ½ cup diced red pepper
- 3 strips bacon, chopped (uncoooked)
- ½ cup peas (fresh or frozen)
- ¼ - ½ tsp garlic powder
- 2½ tbsp coconut aminos (or soy sauce)
- green onions
- cilantro
- salt and pepper
- Preheat oven to 400F. Very lightly spray a sheet pan with cooking spray (I like to use olive oil spray or Chosen Foods Avocado Oil Spray)
- Spread cauliflower evenly on the prepared sheet pan. Scatter on the diced pineapple, red pepper, and the three strips of uncooked diced bacon. Season with salt and pepper and then bake for 15 minutes.
- Remove from oven and add the peas, garlic powder, and coconut aminos/soy sauce. Mix everything all together and then spread back out evenly on the sheet pan. Bake for an additional 10-12 minutes.
- Once done, add the chopped green onions and cilantro. Enjoy!
Note:
The only points are from the coconut aminos and bacon but these will vary by brand. I used Trader Joe’s Coconut Aminos (3) and Kroger Private Selection Center Cut Bacon (2).
This recipe is gluten-free and dairy-free. You can easily make this @whole30 and @paleo by using compliant bacon and substituting chopped green beans or other compliant veggies for the peas.
