There’s few things better than a simple one pot dinner- they make life soooo much easier, and when they are as delicious and hearty as this one, they seriously cannot be beat. My One Pot Red Beans & Rice is a super quick meal that the whole family will love, making it perfect for busy weeknights. You can kick up the spice and serve it up for a ballgame and have leftovers for lunch during the week. The dish is full of sauteed peppers and onion, a fluffy, flavorful rice, smokey sausage, and cajun spices. In less than 30 minutes you have a cozy, hearty meal that will please just about anyone. We start by sauteing some peppers and onions, eventually adding in some garlic and precooked smoked sausage. Once everything is soft and starting to caramelize, we add in a can of chicken broth, diced tomatoes, red beans, and our spices. When things start to boil all that’s left to do is add in our quick-cooking rice. Once the rice is cooked it’s time to eat! The rice is extra flavorful because it’s cooked in the tomato juice and chicken broth. SO EASY. SO GOOD.
For the sausage I used one of my favorites – Gilbert’s Craft Sausages Smoked Andouille Chicken Sausage. They are SO flavorful and full of yummy spices, roasted bell peppers, and onions. You can check their store locator to see if you can find these in your area but if not, no worries, you can substitute another similar precooked sausage or even some smoked turkey sausage or kielbasa.

- 1 tbsp olive oil
- 1 green bell pepper, sliced into thin strips
- 1 yellow bell pepper, sliced into thin strips
- 1 small onion, quartered and sliced thin
- 2 cloves garlic, minced
- 4 Gilbert's Craft Sausages Andouille Chicken Sausages, cut into ¼ inch pieces*
- 1 15 oz can low sodium fat free chicken broth
- 1 15 oz can diced tomatoes
- 1 15 oz can red beans, rinsed and drained
- 2 cups Minute rice (white instant rice), uncooked
- 1 tsp cajun or creole seasoning blend
- 1 bay leaf
- pinch of crushed red pepper, to taste
- parsley to garnish, if desired
- Heat olive oil in a large, heavy pot over medium heat. Add peppers and onions and saute until soft, about 8 minutes.
- Add in the sliced sausage and minced garlic and saute until garlic is fragrant, about 2-3 minutes.
- Add the chicken broth, tomatoes, red beans, cajun seasoning, bay leaf, and crushed red pepper. Bring to a boil.
- Stir in the minute rice and cook for 3 minutes. Cover pot, remove from heat, and allow rice to sit for 5-10 minutes, until the liquid has absorbed. Fluff rice before serving. Garnish with parsley, if desired. Enjoy!
*If you are unable to find this brand of sausage you can substitute another similar precooked sausage. Smoked turkey sausage or kielbasa would be good! This sausage is 2 SmartPoints and 100 per link so you may need to recalculate points based if you change the brand.
