One Pot Red Beans & Rice

Ingredients
  • 1 tbsp olive oil
  • 1 green bell pepper, sliced into thin strips
  • 1 yellow bell pepper, sliced into thin strips
  • 1 small onion, quartered and sliced thin
  • 2 cloves garlic, minced
  • 4 Gilbert's Craft Sausages Andouille Chicken Sausages, cut into ¼ inch pieces*
  • 1 15 oz can low sodium fat free chicken broth
  • 1 15 oz can diced tomatoes
  • 1 15 oz can red beans, rinsed and drained
  • 2 cups Minute rice (white instant rice), uncooked
  • 1 tsp cajun or creole seasoning blend
  • 1 bay leaf
  • pinch of crushed red pepper, to taste
  • parsley to garnish, if desired
Instructions
  1. Heat olive oil in a large, heavy pot over medium heat. Add peppers and onions and saute until soft, about 8 minutes.
  2. Add in the sliced sausage and minced garlic and saute until garlic is fragrant, about 2-3 minutes.
  3. Add the chicken broth, tomatoes, red beans, cajun seasoning, bay leaf, and crushed red pepper. Bring to a boil.
  4. Stir in the minute rice and cook for 3 minutes. Cover pot, remove from heat, and allow rice to sit for 5-10 minutes, until the liquid has absorbed. Fluff rice before serving. Garnish with parsley, if desired. Enjoy!
