Let’s talk about lunch real quick. If you follow me on Instagram then you know that I am a little, okay, more like A LOT obsessed with chicken salad. I like to skip the bread and make fun chicken salad plates filled with all sorts of snacky goodies. The chicken salad itself is only 1 Blue WW SmartPoints/3 Green WW SmartPoints!! #itstrue!
These chicken salad plates are great to prep for the week! Make a big batch of chicken salad and divide it into small containers and then package up your sides separately for easing grabbing. I find that these plates are extremely filling and satisfying plus you can customize your sides based on whatever you are craving.
I like to serve my salad on a bed of greens and add some extra fruit, crackers (I like Trader Joe’s crisps, Triscuit thins, or Simple Mills farmhouse cheddar crackers), and cheese (Light Babybel or a wedge of Laughing Cow).

- 3 oz cooked chicken breast, shredded or diced into small pieces
- 2-3 tbsp fat free plain greek yogurt
- ½ of a celery stalk, diced small
- ~ 1.5 tsp green onion, diced
- 10 grapes, cut in half
- 6 g (about 2 tsp) pecan pieces or sliced almonds
- salt and pepper, to taste
- In a bowl mix together chicken breast and greek yogurt, adding more greek yogurt, if needed, until the chicken is your desired consistently.
- Season with a little salt and pepper.
- Add remaining ingredients and stir well. Enjoy!
For multiple servings simply multiply the recipe by your desired number of servings!
