Hi, Jessica, tell us about yourself!
Hi! My name is Jess and I’m a twenty-something stay at home mama from VA. I follow the WW program and have been posting the ups and downs of my weight loss journey over on IG for the past 3+ years! You can find me on Instagram at @_blessedjess.
What motivated you to change your lifestyle?
My husband and I had been trying to get pregnant for over a year and a half with no success. My doctor recommended trying to lose weight to help with our chances of conceiving before moving forward with other infertility treatments. That was the push that I needed to make a change to my lifestyle! Since joining WW, I’ve had two daughters and have come back to the program after my pregnancies ended. I love the flexibility that WW offers and that no foods are off limits.
What are you favorite foods to cook?
I have a big sweet tooth so I enjoy baking. I like looking for lightened up recipes of some of my favorite foods and try to share with friends and family so that I don’t end up with too many goodies in the house!
What is one piece of advice you’d give someone just starting out on a health journey?
Take ALL of the before/during progress pictures of yourself. I wish I had more from before I started because they always help to motivate me to keep going when I hit a rut or plateau!
Tell us about the recipe you are sharing today!
This recipe is for “fried” rice. It’s lighter on calories and WW points by using cauliflower rice. I was totally one of those skeptics when it came to trying cauliflower rice for the first time, but it really is a great substitute for this meal and I don’t find myself missing the real rice! To save time, I like to buy the rice frozen and chopped already, but you could also use fresh cauliflower and chop it yourself if you prefer. I always pair it with steamed broccoli and chicken with some general Tso’s stir fry sauce to complete the meal! This is such a quick and easy weeknight meal and one of our favorites!
Jess’s Chinese Fakeout Cauliflower Fried Rice is a versitle side dish to serve with your favorite Chinese entree. You can serve it as an entree itself by adding chicken to the rice (for zero points!) Her recipe makes two servings at 2 Blue WW SmartPoints/4 Green WW SmartPoints each. Be sure to keep up with Jess and her journey over on @_blessedjess!
- 1 package frozen cauliflower rice
- ½ c frozen mixed vegetables (I use carrots/peas)
- 2 tsp sesame oil
- 3 tbsp low sodium soy sauce
- 2 eggs
- green onion, for garnishing
- Heat oil in a large skillet.
- Add cauliflower rice and soy sauce, mixing until combined.
- Add vegetables and cook for 3-5 minutes, or until they are cooked through.
- Add eggs in the center of the skillet, breaking the yolk, and stirring until the eggs are combined with the rice and they are cooked.
- Serve with green onion on top and enjoy!
