Chinese Fakeout Cauliflower Fried Rice

Ingredients
  • 1 package frozen cauliflower rice
  • ½ c frozen mixed vegetables (I use carrots/peas)
  • 2 tsp sesame oil
  • 3 tbsp low sodium soy sauce
  • 2 eggs
  • green onion, for garnishing
Instructions
  1. Heat oil in a large skillet.
  2. Add cauliflower rice and soy sauce, mixing until combined.
  3. Add vegetables and cook for 3-5 minutes, or until they are cooked through.
  4. Add eggs in the center of the skillet, breaking the yolk, and stirring until the eggs are combined with the rice and they are cooked.
  5. Serve with green onion on top and enjoy!
