Broccoli, Ham, and Swiss Hot Pockets

I swear, is there anything that two ingredient dough can’t make?!  I’ve yet to find it!  The other day I was grocery shopping and browsing the freezer section when I stumbled upon some Hot Pockets.  I was instantly transported back college where I used to live off of Lean Pockets……. Lean Pockets dipped in ranch.  Don’t judge me, mmmmk?  A Hot Pocket actually sounded pretty good in that moment but they’re tiny and not really worth the points so I thought why not make my own?!  Voila!

These little guys were easy to make and I loaded em up with plenty of filling.  The filling possibilities are endless here but I decided to try broccoli, ham, and swiss cheese.  Turned out DELISH! I started with a base of two ingredient dough (just self-rising flour and greek yogurt), divided it into four pieces, rolled it out, and got to stuffin’.

I used a wedge of Laughing Cow light swiss cheese, some deli ham, and steamed broccoli.  The creaminess of the swiss cheese was perfect in these pockets! A little bit of the cheese seeped into the crust making the bottom and edges have an extra toasty, nutty flavor  which is easily my favorite part! These are great to prep ahead for easy lunches during the week – you can simply reheat them in the microwave or toaster oven.  I paired mine with a simple side salad but it would also be great with a bowl of soup!

Broccoli, Ham, and Swiss Hot Pockets

Serves: 4 hot pockets
Ingredients
  • 1 c. Gold Medal self-rising flour, 2 tbsp reserved for dusting
  • 1 c. plain, fat free greek yogurt
  • 1 c. lightly steamed broccoli, roughly chopped (I used frozen)
  • 8 oz deli ham (look for a ham that is 1 smart point for a 2 oz serving)
  • 4 wedges of Laughing Cow light swiss cheese
Instructions
  1. Preheat oven to 425F. Lightly spray a cookie sheet with olive oil spray and set aside.
  2. Lightly steam your broccoli. I steam mine in the microwave by adding 2 tsp of water in to the bottom of a bowl and cooking it for 2-3 minutes. Works with fresh or frozen! Drain well, roughly chop broccoli, and set aside.
  3. Make your Dough: Mix together greek yogurt and flour (reserve 2 tbsp for dusting) in a large bowl. Mix well. Turn dough out onto a lightly floured surface and knead until dough comes together into a ball. Add a little bit of flour while kneading if dough is sticky.
  4. Divide dough ball into 4 portions. Working on a lightly floured surface roll one of the dough balls into a large rectangle or circle. Add flour as needed to prevent sticking. Dough should be thin, as it will rise.
  5. Add your filling: spread one wedge of cheese onto one side of the dough, being sure to leave about ⅓ inch border. Top cheese with 2 oz of ham and ¼ of the broccoli. Fold the other half of the dough over top of the filling and seal edges by crimping or pressing with a fork. Transfer pocket to your cookie sheet and repeat the steps for the other three portions of dough. *Note: You can fill the dough on your cookie sheet if it's easier for you.
  6. Cut three 1 inch slits in the top of each pocket and lightly mist with olive oil spray. I added a little fresh cracked black pepper to the top too.
  7. Bake for 15-18 minutes until the dough is cooked and golden brown. Enjoy!

    Do these hot pockets freeze and re-heat well if I meal prep these?

      I haven’t tried to freeze them yet but I THINK they should freeze well. I’ll try it next time I make them!

    Making these today for school. Couldn’t get Laughing Cow Swiss , I live in Northern Canada so I used regular light Laughing Cow. Will experiment with different shredded light cheese mixes. Also I gave them an egg wash and some got homemade everything but bagel spice. Thanks for the share. So handy. They are in the oven and spelling heavenly. I will definitely freeze some.       Great idea about the bagel seasoning – I’m sure that’s going to be delicious! I was thinking shredded mozzarella would also be tasty in these – enjoy!!

    Help me!! I LOVE this idea, but I’m finding it very difficult to work with the dough. Even with the dusting my dough is sticking to everything! Any advice?

    On another note I currently have apples in the crock pot following your apple butter recipe. I can’t wait to try it!!

      When you get out the greek yogurt make sure you pour the clear liquid (whey) off the top. Also you can use a scant cup of yogurt and see if that helps. Maybe start with just 3/4 c. If that doesn’t work just keep adding flour until it’s not too sticky – the extra I use in the recipe is usually enough for me but if your yogurt is extra watery it might need more.

    Any tips/tricks for the dough? Mine always turns out so sticky that I get frustrated with it and end up tossing it.

      Start with a little bit less greek yogurt than the recipe calls for and make sure you pour off any liquid (whey) that’s sitting on top of the yogurt. If it’s sticky just keep adding more flour until you can work with it. Flour will get rid of the stickiness! It can be a little tricky but once you get used to working with it you can make all sorts of things!

    Just made these for the first time – amazing!! My kids didn’t know what a hot pocket was so we YouTubed the 90’s commercials while we ate. Explained to the kids these were a gourmet, much better for you version of those ! Plus, they don’t burn the heck out of your mouth like the frozen ones 😂
