My husband and I are HUGE fans of Middle Eastern food – there’s just something about all of the spices that we can’t get enough of. Occasionally I like to try to recreate some of our favorite dishes at home but usually it’s just not the same, ya know? Just not the same until I made this beef kofta, that is! Seriously, y’all, this is a DELICIOUS lightened up version of a classic and only 5 WW SmartPoints on both the Blue and Green Plans.
These kofta are so easy to make and they’re insanely flavorful thanks to all of the warm spices. Tony likes me to meal prep these for his lunches during the week so I usually make a double batch whenever I fix them. You can serve them as a sandwich, over rice, or with a side of pita. I like to pair mine with a quick tomato and cucumber salad, hummus, and tzatziki or greek yogurt.
