Hi, Emmy, tell us about yourself!
Hi! I’m Emmy, also known as @weightforit_ I’m a 25 yr old living it up in New York City.
What motivated you to change your lifestyle?
My health journey started when I was in Austin Texas. I was working at a tech company as a software designer. I had just graduated college and between moving states and starting a new job I had gained some weight and wasn’t feeling my best. I joined weight watchers and started my account for accountability like most – this obviously ended up turning into a whole lot more! I fell in love with wellness and challenging myself to come up with recipes that were “healthier” that my usual. Now its been a couple of years and I’ve moved from Austin Texas and my previous company to New York City working at Weight Watcher’s Corporate office as a member of their design team working on the new WW program. 🙂
What are your favorite foods to cook?
My favorite foods to cook are totally Season dependent. Spring and Summer I love shrimp and fish dishes or snack plates. Fall I’m a huge curry fan or I love to make quiches and tarts. Winter I love roasted veggie bowls and hashes. Oh and baked goods all year round haha
What is one piece of advice you’d give someone just starting out on a health journey?
Advice I’d give – Don’t try to be perfect, start small, it’s all relative to where you began. I just try to remind myself to make better choices, they don’t have to be the best choices.
Tell us about the recipe you are sharing today!
The recipe I’m sharing is my attempt at recreating my New Yorker fav- Chinese BBQ chicken buns.
Emmy’s recipe starts with our old fav and WW staple, two ingredient dough! It’s filled with a delicious bbq chicken mixture and baked until golden and perfect. - 2 cups self rising flour
- 2 cups plain, fat free greek yogurt
- 1.5 cooked chicken breasts, diced
- ½ onion, diced
- 2 tbsp sugar
- 2.5 tbsp low sodium soy sauce
- 2 tbsp oyster sauce
- 1 tbsp sesame oil
- ¾ c chicken broth, low sodium
- 2 tbsp flour
- 1 egg, lightly beaten
- sesame seeds, to garnish
- PREPARE DOUGH: Mix together flour and greek yogurt and work dough until well combined and formed into a large dough ball.
- PREPARE BBQ CHICKEN: Heat a skillet on medium high heat and spray with cooking spray. Add diced onion and saute for 2-5 minutes, until the onion is soft.
- Add sugar, soy sauce, oyster sauce, and sesame oil. Stir together and cook until mixture starts to bubble.
- Add chicken broth and flour to the mixture. Reduce heat to medium low and keep stirring for a few minutes until the mixture has thickened.
- Remove from heat and stir in diced chicken. Set aside to cool.
- ASSEMBLE BBQ BUNS: Preheat oven to 350F. Turn dough out onto a floured surface and knead well until it is not sticky. Divide dough into 16 pieces.
- Roll each piece into a flat circle and add a spoonful of the chicken mixture into the center. Using your fingers, pinch the dough together until the bun is tightly secured. Place seam side down onto a greased/lined baking sheet.
- Repeat until you have made 16 buns. Brush tops with egg wash and sprinkle with sesame seeds.
- Bake buns for 15-17 minutes. Broil for an additional minute until the tops re golden brown. Enjoy!
