Just popping in to share an easy side dish with you! Every time I make potatoes I’m surprised by how point friendly they are. You can have 4 oz of red, yellow, or white potatoes for just 2 WW SmartPoints! It doesn’t take much oil to get these guys to crisp up either – the secret is all about how you cook them!
First thing – cook your potatoes directly on the baking sheet. I know lining the pan with foil or parchment paper makes clean up easier but for crispy potatoes you really need your potato to sizzle on that metal sheet! Trust me, I’ve tried a million times and my repeated attempts prove this.
Second – you have to give your potatoes room to breathe! Don’t crowd the pan….whatever you do, do not crowd the pan! Your potatoes shouldn’t be touching or overlapping in any way – use two pans if you need to! The air circulating around each potato wedge is going to help achieve the perfect texture.
Last thing? Don’t be afraid of seasonings! It’s so much fun to mix and match what spices you use. My general go to is garlic, paprika, salt, and pepper. And I season liberally because bland potatoes? Boooooring! In the fall and winter I like to throw on rosemary or thyme and if we’re enjoying these on a game day I like to add a smokey kick with some chili powder and cumin! Seriously, season these babies up to compliment whatever you’re serving. Seasonings are zero smart points so make them count!
These potatoes are literally the PERFECT side dish – crispy outside, tender inside, plus they’re super versatile and couldn’t be easier to make! This recipe makes 4 servings at 3 WW SmartPoints on both the Blue and Green plans. You can also divide the potatoes into 3 serving for 4 Smart Points per serving or enjoy 1/2 of the recipe for 7 Smart Points. Enjoy!
- 1 lb red potatoes, washed and dryed
- 2 tsp avocado oil (can sub another oil but I love avocado oil for roasting because it has a high smoke point)
- salt, pepper, paprika, and garlic powder
- other seasonings, to taste
- Preheat oven to 425F.
- Slice potatoes into ½ inch thick wedges.
- Toss with 2 tsp of avocado oil and season well with salt, pepper, paprika, and garlic.
- Add any additional seasonings, if desired.
- Arrange potatoes in a single layer on a baking sheet, making sure they aren't touching.
- Bake for 15 minutes, flip wedges, and bake an additional 10-15 minutes until potatoes are golden brown and crispy.
