Hi, Karen, tell us about yourself!
Hi there! I’m Karen and I’m so excited to be featured on Rachel’s “Friend Friday” blog post! I live about 30 minutes from Rachel in Louisville, KY and we met via Instagram. I’m @themrskray there 🙂 I was a fellow Weight Watcher and just recently decided to continue my health journey on my own. I completed my first Whole30 last month and it was incredible. I learned so much and look forward to incorporating those things moving forward, with a cold beer in hand. #balance
What are your favorite foods to cook?
To be completely honest, I LOVE to bake indulgent treats for my husband and whomever wants some! I have a “culinary bucket list” and any chance I get to cross one off, I do! I just made homemade rum caramel to drizzle on a homemade rum raisin cake. However, my favorite thing to make for myself is a buddha-style bowl. Grab some greens, protein, carbs, veggies, nuts, dressing, and always add an avocado. The variations and flavors are so versatile! What is one piece of advice you’d give someone just starting out on a healthy journey?
Start small! No need to train for a marathon and count every calorie in one swoop. Focusing on one thing and getting comfortable with that will make the lifestyle change much more enjoyable. For me, getting comfortable in the kitchen was my priority. Once I had a good grip on that, I started walking. Things add up!
Tell us about the recipe you are sharing today!
While doing the Whole30, I wanted a way to switch up the way I prepared eggs every morning. I was making french toast for my husband one morning, and I had the idea to “scramble” the egg custard mix. No bread needed! I used 2 eggs, 1/4-1/2 tsp of cinnamon, 1/8 tsp of vanilla, pinch of sea salt, and whisked away. I then poured the mix into a skillet and cooked it like I would scrambled eggs. Boom! French toast eggs were born! I didn’t even miss the bread.

- 2 eggs
- ¼-1/2 tsp cinnamon
- ⅛ tsp vanilla, optional*
- pinch of sea salt
- Whisk together the eggs, cinnamon, vanilla, and salt.
- Pour into a skillet over medium heat and cook for a few minutes, until eggs are set, just as you would cook scrambled eggs. Enjoy
*Omit vanilla if following Whole 30.
