Hiya! Today I wanted to share an old favorite breakfast – my Easy Cheesy Grits! There’s about a million reasons I love this meal but the top three: 1) It’s super quick 2) It’s versatile based on whatever you have in the fridge 3) It’s total comfort food. If you’ve ever had cheese grits you know they’re straight up magical and that’s because they’re loaded with butter and cheese. How couldn’t they be delicious?! I made a lightened up version by using Laughing Cow cheese. Yes yes, it’s not as rich and decadent as the real deal but you can eat it every single day and it still makes a great, hearty meal. I’m going to be showing you my go-to, classic way of making these plus a bunch of variations I’ve made in the past! One serving of my Easy Cheesy Grits is 5 Blue WW SmartPoints and 7 Green WW SmartPoints.
To make my go-to version of this recipe I use grits, pepper jack Laughing Cow cheese, spinach, crumbled turkey sausage, 1-2 eggs cooked any style, and hot sauce. In the summer I love to add some fresh tomato on top too. The whole thing is ready in just about 10 minutes.
You can make so may versions of this recipe by using whatever you have on hand. Sometimes I use bacon or a chicken sausage instead of the crumbled turkey sausage. Sometimes I switch up the cheese and use different flavors of Laughing Cow or throw in some creamy goat cheese or shredded mozzarella. You can also switch up the spinach for other veggies – I love adding sauteed Brussels sprouts or roasted asparagus. Finally, you get to top it with any style of eggs! Poached, soft boiled, and fried are my favorites for this dish.
You can see that the possibilities are endless. Use this basic formula to create your own combo: a serving of grits + cheese + meat + veggies + eggs = One delicious breakfast!
Here’s a bunch of variations I’ve made in the past to give you some ideas:
Grits with goat cheese, roasted asparagus, poached eggs, tomatoes, and balsamic reduction.
Grits with Laughing Cow, Brussels sprouts that were sauteed with two pieces of bacon, boiled eggs, and tomatoes.
Grits with Laughing Cow, spinach, poached eggs, and crumbled bacon.
Grits with goat cheese, sauteed chicken sausage, asparagus, and a poached egg.
Grits with Laughing Cow, sauteed Brussels Sprouts, bacon, tomatoes, and poached eggs.
Grits with Laughing Cow, sauteed spinach, tomatoes, poached egg, and pickled onions.
What combo will you make?! One serving of my Easy Cheesy Grits is 5 Blue WW SmartPoints and 7 Green WW SmartPoints – enjoy!
- ⅔ cup cooked grits or one packet of plain instant grits (points are the same for both)
- ¼ cup precooked crumbled turkey sausage
- 2 handfuls of fresh spinach, roughly chopped
- 1 wedge Laughing Cow Cheese, any flavor (I love pepper jack in this)
- 1-2 eggs cooked, any style
- salt and pepper
- Hot sauce and green onion to garnish, if desired
- A few grape tomatoes, sliced, if desired
- Spray a small skillet with cooking spray and cook spinach until just wilted, about 2 minutes. Set aside.
- Prepare your grits according to the package directions.
- Once cooked stir in your cheese until it is nice and melted. Stir in the cooked spinach and precooked sausage.
- Season grits well with salt and pepper.
- Top grits with your two cooked eggs and garnish with hot sauce and green onion, if desired. Enjoy!

Feel free to switch up the meat, cheese, veggies, etc but please recalculate points based on what ingredients you are using!
