Easy Cheesy Grits

Ingredients
  • ⅔ cup cooked grits or one packet of plain instant grits (points are the same for both)
  • ¼ cup precooked crumbled turkey sausage
  • 2 handfuls of fresh spinach, roughly chopped
  • 1 wedge Laughing Cow Cheese, any flavor (I love pepper jack in this)
  • 1-2 eggs cooked, any style
  • salt and pepper
  • Hot sauce and green onion to garnish, if desired
  • A few grape tomatoes, sliced, if desired
Instructions
  1. Spray a small skillet with cooking spray and cook spinach until just wilted, about 2 minutes. Set aside.
  2. Prepare your grits according to the package directions.
  3. Once cooked stir in your cheese until it is nice and melted. Stir in the cooked spinach and precooked sausage.
  4. Season grits well with salt and pepper.
  5. Top grits with your two cooked eggs and garnish with hot sauce and green onion, if desired. Enjoy!
