Hi, Chelsea, tell us about yourself!
Hi, I’m Chelsea, @weightwatchin_it_withbabies. I’m a former teacher turned stay at home mom to two little girls. It wasn’t until I got married 5 years ago that I started getting interested in cooking. It began with meal planning our dinners and has evolved into following WW and so much more. In the midst of moving to a new state, changing jobs, having children and deciding to stay at home with them, meal planning, WW, easy recipes and meal ideas, and healthy eating habits have gotten me through it all. I’m forever grateful for the healthy habits I have created for myself and my family.
What are your favorite foods to cook?
My favorite things to cook are quick and easy. I don’t like to reinvent the wheel! Veggies and chicken are probably my favorite thins to cook and get creative with!
What is one piece of advice you’d give someone just starting out on a health journey?
My advice for someone just starting on their health journey is to start with one healthy habit or change. Don’t try to do it all at once. Little changes add up to big changes over time. Stick with your healthy changes and overtime you will notice them growing and growing!
Tell us about the recipe you are sharing today!
Today I’m sharing a Brussels sprouts recipe I created based on an appetizer from one of our favorite local restaurants, The Patten House in Geneva, Illinois. One of the things I love about WW FreeStyle is with so many 0 Smartpoint items you can really get creative with flavors and can spend points on places you might not have wanted to before. These Honey Sriracha Brussels Sprouts are amazing on their own as a side dish or are also a favorite of ours piled on top of baked sweet potato wheels with some chicken. I’ve even converted some non-veggie lovers with this recipe!
Chelsea’s Honey Sriracha Brussels Sprouts makes 4 servings at 4 Blue WW SmartPoints and 3 Green WW SmartPoints. Keep up with Chelsea on Instagram at @weightwatchin_it_withbabies. Enjoy!
- 2 lbs Brussels sprouts (I prefer small-medium sized buds; shaved Brussels sprouts would work as well)
- 2 tbsp honey
- 8 slices center cut bacon
- 1-2 tbsp Sriracha (depending on how spicy you like things)
- 2 tsp minced garlic
- 2 tsp light brown sugar
- ½ tsp seasoned salt
- Rinse Brussels sprouts, trim off ends and quarter each one. Don’t worry if some leaves fall off just toss them in with the quartered Brussels sprouts. Spray with cooking spray and set aside.
- Dice bacon (I like to cut mine with scissors) and cook in skillet with brown sugar at medium high heat for about 10-15 minutes or until cooked through.
- Once cooked, add in Brussels sprouts, honey, sriracha, minced garlic and seasoned salt. Cook all together on medium high heat for about 10-15 minutes or until the Brussels become tender and blacken a bit. Note: larger Brussels sprouts may require longer cook time and very small Brussels sprouts may require less cook time.
