If I could only eat one lunch the rest of my life I’m pretty sure it’d have to be chicken salad! I love making a big batch at the beginning of the week so it’s ready to go for quick and easy meals! Chicken salad is healthy and so versatile – so many varieties you can make. I love a good classic, curried, or BLT chicken salad but this buffalo ranch is my new fav! Oh!!! One of the main reasons I love chicken salad lunches is because they’re light and refreshing and you don’t need to worry about heating anything. I love making snacky plates with my chicken salad – add fruit, veggies, a wedge of cheese, boiled egg, crackers (Simple Mills Sea Salt & Farmhouse Cheddar are my all times favorites), you name it! OR it’s makes a great salad topping. No matter how you serve it, it’s delish!
This chicken salad is simple, you just start with 1 lb of cooked chicken breast. You can cook it however you’d like. I usually poach mine but you can prepare it in a crock pot, instant pot, or simply baked in the oven. You shred the chicken and add a few easy ingredients then you are good to go! This one hits all the notes – creamy from the greek yogurt, zesty from the ranch, crunchy from the celery, and has a nice kick from the buffalo.
If you prefer blue cheese you could make a delicious variation – just leave out the ranch and sprinkle blue cheese on top! *(would add points so be sure to adjust for that.)
One batch makes 4 large servings at 0 (yes, still ZERO!) Blue WW SmartPoints or 2 Green WW SmartPoints. Enjoy!

- 1 lb boneless, skinless chicken breast, cooked and shredded
- ½ c plain fat-free greek yogurt
- 2 tsp Hidden Valley ranch mix
- 3 tbsp Frank's buffalo wing sauce (not regular hot sauce)
- 2 stalks celery, small diced
- 2 green onions, green parts only, diced
- Cook and shred chicken - set aside to cool.
- In a large bowl mix together the greek yogurt, ranch mix, and buffalo sauce.
- Add the shredded chicken and stir until well coated.
- Mix in chopped celery and green onion.
- If desired drizzle with more buffalo sauce just before serving. Enjoy!
Feel free to leave out the ranch mix if you'd rather have plain buffalo chicken salad - still delicious!
