This quick and easy sweet potato hash is a perfect one pan dish! It’s got everything you could possibly want – earthy, caramelized veggies, protein-packed sausage, savory spices, and just a little sweetness from the apple. It comes together really quick and makes 4 hearty servings at 6 Blue WW SmartPoints/7 Green WW SmartPoints each . The best part?! Instant breakfast for tomorrow! Throw an egg on top and you’ve got a wonderful, healthy start to you day! Come to think of it I might prefer it for breakfast. Either way you try it, it’s a winning combo!
I started with a diced sweet potato (you just need one since we’ll be bulking it up with so many other veggies!) and once it was about halfway cooked I added in the rest of the line up – sausages, apples, brussels sprouts, plus plenty delicious spices like sage and thyme (love this combo with apples!) I used Gilbert’s Craft Sausages Bourbon Apple Chicken Sausage which perfectly compliments the flavors we already have going on! These sausages are 3 smart points each – you can check their store locator to see if you can find them near you. If not, no worries, use your favorite precooked sausage!
Recipe makes 4 servings at 6 Blue WW SmartPoints/7 Green WW SmartPoints each. Note: This recipe is #Whole30 friendly – just swap out the sausage for a compliant one!

- 1 package, 4 links, Gilbert's Craft Sausages Bourbon Apple Chicken Sausage (or sub with your favorite pre-cooked sausage*), cut into ¼ inch slices
- 1 medium sweet potato, diced into ½ inch cubes (mine was 10oz)
- ½ lb brussels sprouts, quartered
- 2 small apples, diced into ½ inch cubes (I used fuji)
- 4 tsp olive oil, divided
- ½ tsp dried sage
- ¼ tsp dried thyme
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ½ tsp salt, plus more to taste, if needed
- ¼ tsp pepper, plus more to taste, if needed
- Heat a large heavy skillet over medium heat. Add 2 tsp of olive oil and the sweet potato.
- Cook sweet potato, stirring occasionally, for 5 minutes, until the outside starts to brown. Turn heat to low, add in ⅓ c water, cover and cook for 3-4 minutes, so that the sweet potato begins to soften.
- Uncover and add in the brussels sprouts, sausage, apples, and all of the spices. Drizzle with 2 tsp olive oil and stir until everything is well combined.
- Return heat to medium and cook, stirring occasionally, for about 5 minutes.
- Apples should soften and the brussels sprouts and sausages should start to become brown and caramelized. If veggies are not fully cooked after 5 minutes add ⅓ c of water, turn heat to low, and cover for 3-4 minutes longer.
- Season with salt and pepper to taste. Enjoy!
