This recipe is an oldie but a goodie – I’ve been making it for years now and it never disappoints. It’s probably the top requested recipe from my husband, Tony, because it’s PERFECT for nights full of all the sports watching. I’m not really into sports but this dinner makes game nights much muuuuch more tolerable. My Loaded Sweet Potato Bites fulfill all the requirements of good game grub – spicy, cheesey, potatoey, and bacony goodness – what’s not to love?! One serving of my potato bites is 9 Blue WW SmartPoints/10 Green WW SmartPoints.
These babies are super easy to make. Start by looking for a sweet potato that would make chip-sized rounds when sliced, one that’s not to thick. (The skinnier it is the more slices you get out of your potato!) You slice it thin and season it up with some warm, smokey spices then pop the potatoes in the oven to cook.
While that’s happening you prep the rest of your ingredients – cook up some bacon, chop some green onion, and measure out your cheese and Greek yogurt. Once the potatoes are nearly done you’ll top them with your cheese and crumbled bacon and send everything back into the oven until the cheese is all nice and melty.
This recipe is written for one serving but it’s easy to multiply based on how many people you want to feed. Tony and I make our own pan full of potatoes which works out great because he can add extra spices and cheese to his. We usually eat them right off the baking pan because why not?! Less dishes!
Make these for your next football or basketball night or even the next time you have a craving for some good ol’ bar food. Serve them up with a beer for the ultimate game day dinner. Let me know how they turn out!

*Note: You can save a point by using Trader Joe’s lite mozzarella cheese and you can also try to find a bacon that is 1 sp for 2 slices to save an additional point (or one that is 3 slices for 2 sp to get more bacon for your points)! See recipe notes for complete point breakdown.
- 1 tsp olive oil
- 1 small sweet potato (5 oz), sliced into thin rounds (I try to make sliced that are a bit less than ¼ inch thick)
- Garlic powder
- Chili powder
- Salt and pepper
- 2 slices of bacon, cooked and crumbled
- 1 oz shredded mozzarella cheese
- 2 tbsp green onion, diced, more if desired
- 3 tbsp plain fat free Greek yogurt, more if desired
- Hot sauce, to taste (Frank's original red hot is my favorite on these)
- Preheat oven to 425F
- Toss the sliced potatoes with 1 tsp olive oil and lay in a single layer on a baking sheet.
- Generously season with chili powder and garlic powder. Add salt and pepper to taste. (No measurements needed, whatever looks good! I season pretty liberally with the chili powder and garlic).
- Toss the sweet potatoes again so they are well coated with the seasonings on both sides. Return them to a single layer.
- Bake for 10 minutes. Remove from oven, flip, and bake for an additional 7-10 minutes or so. (Watch potatoes closely at the end - cook time will depend on how thick your slices are!)
- During the last few minutes of cook time top with the shredded cheese and crumbled bacon. Allow to cook until the cheese is nice and melted.
- Garnish with green onion and hot sauce, to taste. Serve with Greek yogurt for dipping! Enjoy!

5oz Sweet Potato (4sp) *a larger sweet potato will add additional points - I make my rounds and weigh them out on a kitchen scale. I add any extra to my husband's pan.
2 pieces of bacon (2sp) *Save a point by finding a bacon that is 1 sp for two slices
1 oz lite mozzarella (2sp) *Save a point by using Trader Joe's lite mozzarella if you can
