The first time I made this dish we had company staying with us for the weekend and to be honest, I kind of surprised myself with how good it turned out! It’s easy to make but feels a little more fancy than your standard quiche or egg casserole. The potatoes turn golden brown and crispy – the filling can be your favorite veggies, meats, or cheeses! So versatile!
Since then I’ve made it for myself several more times – always shopping my fridge for whatever I have on hand. There’s no need to wait for company to make this special dish because it’s great to meal prep and eat on all week!
For this variation I used Gilbert’s Craft Sausages Smoked Gouda Chicken Sausage links. They’re just 3 Weight Watchers Smart Points each and bursting with melted cheese. SO GOOD. You can check their store locator to see if you can locate them near you but if not feel free to use something similar. You could even use crumbled bacon or turkey sausage – both delicious options!

- 7 oz frozen hashbrown potatoes, thawed
- 1 tbsp butter, melted
- 6 ox frozen spinach, thawed and pressed well to remove as much liquid as possible
- ½ c sweet onion, diced small
- 3 Gilbert's Smoked Gouda Chicken Sausages, cut in half lengthwise and then into ¼ inc pieces
- 6 eggs
- 3 egg whites
- Salt, pepper, and garlic powder, to taste
- Preheat oven to 400F. In a large bowl mix potatoes and butter then season with salt, pepper,
- and a sprinkle of garlic powder. Press the potato mixture into the bottom of a pie pan, making
- sure to work the potatoes up the side of the pan. Keeping working the potatoes until you have
- a thin, even layer. Bake the crust for 30 minutes, until slightly golden brown.
- Meanwhile whisk eggs and egg whites in a large bowl. Fold in spinach, onion, and sausage
- then season egg mixture with a little salt and pepper.
- Remove crust from oven. Turn heat to 350F. Fill crust with egg mixture and return to oven.
- Bake for 30-35 minutes, until the middle is set. Enjoy!
