Sweet Potato Hash with Sausage, Apples, and Brussels Sprouts

Serves: 4 servings
Ingredients
1 package, 4 links, Gilbert's Craft Sausages Bourbon Apple Chicken Sausage (or sub with your favorite pre-cooked sausage*), cut into ¼ inch slices
1 medium sweet potato, diced into ½ inch cubes (mine was 10oz)
½ lb brussels sprouts, quartered
2 small apples, diced into ½ inch cubes (I used fuji)
4 tsp olive oil, divided
½ tsp dried sage
¼ tsp dried thyme
¼ tsp garlic powder
¼ tsp onion powder
½ tsp salt, plus more to taste, if needed
¼ tsp pepper, plus more to taste, if needed
Instructions
Heat a large heavy skillet over medium heat. Add 2 tsp of olive oil and the sweet potato.
Cook sweet potato, stirring occasionally, for 5 minutes, until the outside starts to brown. Turn heat to low, add in ⅓ c water, cover and cook for 3-4 minutes, so that the sweet potato begins to soften.
Uncover and add in the brussels sprouts, sausage, apples, and all of the spices. Drizzle with 2 tsp olive oil and stir until everything is well combined.
Return heat to medium and cook, stirring occasionally, for about 5 minutes.
Apples should soften and the brussels sprouts and sausages should start to become brown and caramelized. If veggies are not fully cooked after 5 minutes add ⅓ c of water, turn heat to low, and cover for 3-4 minutes longer.
Season with salt and pepper to taste. Enjoy!
