Apple Pomegranate Salad

Serves: 1 hearty salad
Ingredients
  • 3 oz Tyson® Grilled & Ready® Fully Cooked Grilled Chicken Breast Strips
  • 3 c mixed greens
  • ½ small apple, diced or sliced (I prefer fuji or gala)
  • ¼ c pomegranate arils
  • 1 oz. goat cheese, crumbled
  • 2 Tbsp. red onion, sliced thin
  • ¼ c cooked quinoa (feel free to buy precooked quinoa)
  • 2 Tbsp. light or fat free balsamic vinaigrette
Instructions
  1. Cook chicken according to package directions (I prefer to heat mine in a skillet).
  2. Layer a large bowl with mixed greens and top with the chicken, apple, pomegranate, goat cheese, red onion, quinoa, and dressing. Enjoy!
