Quick Pickled Onions

Ingredients
  • 1 red onion, thinly sliced
  • ½ c apple cider vinegar
  • 1 c water
  • 1 tbsp sugar
  • 1.5 tsp salt
Instructions
  1. In a quart jar or microwave safe bowl mi vinegar, water, sugar, and salt.
  2. Microwave for 1 minute and stir. The goal is to dissolve the sugar so continue heating in 30 second intervals until sugar is gone. (Mine usually takes about 1½ minutes total.)
  3. Add onions to the hot vinegar and microwave for 1 more minute.
  4. Allow onions to cool to room temperature and then cover and refrigerate. (Don't refrigerate before they are cooled because it's important for them to stay warm for quite a while by cooling slowly.)
  5. Allow onions to pickle at least 1 day before servings. They are at their best after a couple of days! Enjoy!
Notes

Will keep for several weeks in the fridge.
