Cajun White Bean and Sausage Skillet

Wow.  I forgot how nice it is to cook dinner without dirtying half of my dishes!  I created this simple one pan dish from a few pantry staples, some flavorful sausage, and fresh spinach – it’s one of those comfort meals that just makes you feel good inside! Now that fall is on the horizon it’s the perfect dish to get you in the mood for all things cozy.  Did I mention that a big serving is just 3 Blue WW SmartPoints/7 Green WW SmartPoints?! Oooh yes!

To start you’ll want to pick up some of your favorite sausage – I used Gilbert’s Craft Sausages Andouille Chicken Sausage.  You can check their store locator to see if you can find this variety near you.  If you can’t, no worries, you can sub some turkey smoked sausage or kielbasa, whatever kind you’d like will work!

Grab a large skillet and heat up a little bit of olive oil – just enough to brown up our sausage.  After that we’ll be adding in some garlic, cannellini beans, tomatoes, and some zesty cajun seasoning! Everything simmers together for about 15 minutes before we wilt in some fresh spinach.  Voila! So easy!

This dish is warm and nutritious – it’s packed with protein and fiber and comes together super quick.  Serve with a slice of crusty bread for ultimate deliciousness and enjoy leftovers throughout the week!  Would also be wonderful topped with a bit of Parmesan cheese!

Makes 4 hearty servings at 3 Blue WW SmartPoints/7 Green WW SmartPoints per serving.  *Note: Using a different sausage might alter the points of the dish so remember to recalculate for substitutions. These andouille sausages are 2 WWSP each.

Serves: 4 servings
Ingredients
  • 1 package (4 links) Gilbert's Craft Sausages Andouille Chicken Sausages (or sub a smoked turkey sausage or turkey kielbasa*)
  • 2 tsp olive oil
  • 1 clove garlic, minced
  • 2 cans cannellini beans, drained and rinsed
  • 1.5 c chicken broth, lower sodium preferred
  • 1 can tomatoes, petite diced
  • small bag of baby spinach, 5 oz
  • 1 tsp onion powder
  • 1 bayleaf
  • 1 tsp cajun (or creole) seasoning
  • pinch of crushed red pepper
  • salt/pepper, to taste
Instructions
  1. Cut sausage links into ¼ inch pieces.
  2. Heat oil in a large skillet over medium heat. Add sausage and cook for 3-4 minutes until sausage begins to brown.
  3. Add garlic and cook for 1 minute, until just golden and fragrant.
  4. Add in the tomatoes, chicken broth, beans, onion powder, cajun seasoning, bay leaf, and crushed red pepper.
  5. Bring to a boil and then reduce heat to low and allow to simmer uncovered for about 15 minutes, stirring occasionally.
  6. Remove bay leaf and taste - add salt and pepper if desired. (Many cajun seasoning blends will have plenty of salt so you probably won't need much, if any.)
  7. In two or three batches wilt in the baby spinach. If nearly all of the liquid has reduced feel free to add in ½ c water or extra chicken broth. Allow spinach to cook down for 2-3 minutes. Enjoy!

Makes 4 large servings at 3 Blue WW SmartPoints/7 Green WW SmartPoints per serving.

*Using a different sausage might alter the points value - please recalculate for substitutions. The andouille sausage is 2 points per link.

    This looks delicious! How much Cajun seasoning and red pepper flakes do you use? I don’t think I saw that in the recipe? If I missed it, apologies! Can’t wait to try it!

    Has anyone made this and measured out exactly how many cups one serving is? I’m guessing 1 1/2 cups?

      Should be about right! When it comes to stuff like this it’s hard to give an exact size because it’ll depend on how much you let it reduce down. I just draw and x in the pan and divide it. When I want to be super exact I’ll transfer everything into the container I’ll be storing it in and weight it as I transfer – then divide in 4!

    Delicious recipe! My husband said I could serve it every night for a week, so you know it was good! I used turkey Polska kielbasa and added chopped zucchini (always trying to sneak in an extra vegetable). Can’t wait to try your other recipes!
