Buffalo Tuna Salad

You know those days when you haven’t been to the grocery in a week or so and you’re rummaging around in the pantry for something to eat? That’s how this tuna salad was born! I pretty much always have the ingredients for this on hand — just three things! — so it’s great anytime I’m in a pinch.  It’s also great anytime I’m trying to keep my points low during the day because the tuna salad is just 1 Blue WW SmartPoint/2 Green WW SmartPoints!!!

Even though this creation was born out of grocery desperation, it quickly became one of my favorite lunches!  I like to pair it with some crackers, extra veggies, fruit, and an egg.  You could even have it as a high-protein snack – just serve it with some celery sticks!

Buffalo Tuna Salad

Serves: 1 serving
Ingredients
  • 1 2.6oz single-serve tuna pouch (in water)
  • 1 wedge The Laughing Cow light spreadable swiss cheese
  • 1 tbsp Frank's Red Hot buffalo wing sauce (plus more to taste)
  • Celery, diced (optional)
  • Green onion, diced (optional)
Instructions
  1. In a small bowl mix together tuna, cheese, and buffalo sauce. Mixture should be well-blended and creamy. Throw in a little bit of diced celery for crunch, if desired.
  2. Add more buffalo sauce, to taste.
  3. Top with a sprinkle of green onion and enjoy!
