Something about this soup reminds of childhood – just good, hearty, homemade goodness, ya know!? It taste like something a grandma would make (and I totally mean that in the BEST way possible!) Potato soup is one of those stick-to-your-ribs comfort foods but I decided to kick it up a notch by adding in some smokey sausage! If you’ve ever had a potato and ham soup it’s reminiscent of that….. but better! Creamy potato soup that’s filled flavorful smoked sausage is a perfect combo. One hearty serving of my Potato and Smoked Sausage Soup is 7 WW SmartPoints on both the Blue and Green WW plans or 173 calories!
I don’t know why I don’t make potato soup more often – there’s really nothing to to it! A few simple ingredients give you some amazing flavor and it doesn’t take long at all to whip up a pot. It’s rich, and thick, and perfect for this time of year because it warms you from the inside out.
To make the soup you need 2 lbs of potatoes, an onion, a clove of garlic, a little oil, chicken broth, milk, and your sausage. I am using Gilbert’s Craft Sausages Andouille Chicken Sausage which is one of my all time favorites! Each link is packed with flavor and only 100 calories/2 WW SmartPoints. You can check their store locator to see if you can find them in your area but if not you can sub something similar. You can use some smoked turkey sausage or even some diced ham!

- 1 tbsp olive oil
- 1 onion, diced small
- 1 clove garlic, minced
- ½ tsp salt
- ½ tsp pepper
- 2 lbs white potatoes - washed, peeled, diced into ½ inch cubes (I used russet)
- 4 cups low sodium chicken broth
- 4 links of Gilbert's Craft Sausage Andouille Chicken Sausage, diced into ½ inch cubes *(Or sub similar pre-cooked sausage, such as smoked turkey sausage, or ham if you can't find this one)
- 1-2 cup 2% milk (see note)
- Green onion to garnish, if desired
- Heat oil in a large, heavy soup pot over medium heat. Add onion along with the salt and pepper and saute until soft, about 5 minutes.
- Add garlic and saute until fragrant, about 1 minute.
- Add chicken broth and diced potatoes and bring to a boil.
- Reduce heat to a low boil and let cook until the potatoes are soft and cooked through, about 12-15 minutes (check doneness with a fork).
- Using a wire whisk lightly mash some of the potatoes in the pot. (I mash about ⅓ of the potatoes because I like to have chunks and the potatoes will continue to break apart as you stir.)
- Stir in diced sausage and cook on low for about 5 minutes.
- Stir in milk, starting with 1 cup - based on your desired consistency you can add up to 1 more cup without altering the points value. Cook for another 5 minutes.
- Taste and adjust salt and pepper, if needed. Enjoy!
*If you substitute the sausage for something different please check the points, as yours might be different. The Andouille sausage I use is 2 points per link. The 4 links in the recipe account for 10 total SmartPoints (#WWmath).
*If you add 2 cups of milk vs 1 cup the points remain the same - just decide how much you want to use based on your desired consistency. It's great both ways!
