Sweet Potato Skillet with Sausage & Eggs

Who doesn’t love a good hash recipe?!  This sweet potato hash has all the good stuff – tender and browned sweet potatoes, sauteed peppers and onions, savory sausages, and eggs that are cooked to perfection!  It’s filling and hearty, perfect for any time of year or any time of day.  Did I mention it’s a one pan dish?! Total bonus points.  One serving of this delicious skillet hash is 6 Blue WW SmartPoints or 8 Green WW SmartPoints.

As I mentioned above, this is a one pan meal.  You’ll want to make sure to use one that’s oven safe because we’ll cook most of the ingredients on the stove but finish off the eggs in the oven.  I recommend using a large cast iron pan if you have one.  The ingredients for my sweet potato skillet are simple – we’ll just need a large sweet potato, 4 chicken sausages, a green pepper, onion, 4 eggs, and a few spices.

I use Gilbert’s Craft Sausages Green Pepper & Onion Breakfast Sausages which are 2 smart points each.  These are so flavorful and a great size for the points!  You can check their store locator to see if you can find them near you but if not, no worries, just substitute your favorite variety of chicken sausage.

This is a great meal to prep for a week of healthy breakfasts or to serve for company because you have to admit, it looks pretty fancy with the baked eggs!  I promise this is an easy one though, and the flavor combo is just right.  We start by sauteing our potatoes, peppers, and onions with a little bit of garlic and smoked paprika.  Right as the potatoes finish cooking we’ll add in the sausage.  Since it’s precooked it just needs a few minutes to heat through.  After that we’ll add our eggs and transfer everything to the oven to finish cooking.  So simple!

Sweet Potato Skillet with Sausage & Eggs

Serves: 4 servings
Ingredients
  • 4 precooked chicken sausages, sliced into ¼ inch pieces (I used Gilbert's Green Pepper & Onion Chicken Breakfast Sausages but you can substitute another variety if needed*)
  • 12 oz raw sweet potato, diced into ½ inch cubes
  • 1 small green pepper, diced
  • 1 small onion, diced
  • 4 eggs
  • 1 tbsp olive oil
  • ¼ tsp garlic powder
  • ¼-1/2 tsp smoked paprika, to taste
  • salt and pepper, to taste
  • green onion and hot sauce, if desired
Instructions
  1. Preheat oven to 400F.
  2. In a large ovenproof pan (cast iron preferred) heat 1 tbsp olive oil over medium high heat.
  3. Add sweet potato, green pepper, and onion. Stir and season with garlic, paprika, salt, and pepper.
  4. Let potato mixture cook for 5 minutes, stirring often, until veggies begin to soften.
  5. Cover mixture (I use a large lid from another pot) and let veggies continue to cook and brown for another 5 minutes. Stir occasionally and reduce heat if they are browning too fast. NOTE: If mixture seems dry and you're worried it might burn you can add ¼ c of water to the pan. It will cook off and the veggies will continue to brown after it evaporates.
  6. Potatoes should be fork tender and slightly brown. Uncover and add in the sausage.
  7. Stir and let mixture cook for another 3 minutes, until the edges of the sausage begin to brown.
  8. Remove from heat and create 4 small wells in the potato and sausage mixture. Carefully crack an egg into each well.
  9. Place skillet into the oven and cook for about 10 minutes or until eggs reach your desired consistency. I like for my whites to be set and the yolk to be about halfway cooked.
  10. Remove from oven and garnish with green pepper and hot sauce, if desired. Enjoy!

Makes 4 servings at 6 Blue WW SmartPoints or 8 Green WW SmartPoints.

*If you use a different brand of chicken sausage please check the points for that sausage and adjust points value accordingly.
